摘要
β-glucanisoneofthemostimportantsourcesofcellwallinyeaststrains(Saccharomycescerevisiae).Itisnowknownthatβ-glucannotonlyexhibitsabroadspectrumofbiologicalactivitiesincludingimmune-modulating,anti-inflammatory,anti-cancer,andanti-agingproperties,butalsocanbeusedinfoodproductionasmoisturizer,dietaryfibers(DF)[1].Therefore,itisimperativetobreedyeaststrainswithhigherbiomassproductionandoptimizethefermentationprocess.Saccharomycescerevisiaeneedscarbonsourcesinbiomassaccumulation,butglucoseisexpensiveinindustrialfermentation[2].TheaimofthisstudyistoevaluatethedifferentcarbonsourcesonthegrowthofSaccharomycescerevisiae.
