Thispresentstudyinvestigatedtheabilityofvarioussoyproteinhydrolysates(SPHs)inbindingcalcium.ItwasdemonstratedthattheamountofCa-bounddependedgreatlyontheSPHsobtainedusingdifferentproteases,whichincluded:neutrase,flavourzyme,proteaseMandpepsin.ThemaximumlevelofCa-bound(66.9mg/g)occurredwhenproteaseMwasusedtohydrolyzesoyprotein.PeptidefragmentsexhibitinghighCa-bindingcapacityhadmolecularweightsofeither14.4or8-9kDa.ThelevelofCa-boundincreasedlinearlywiththeincrementofcarboxylcontentinSPHs,andfurtherdeamidationonSPHsfromproteaseMimprovedCa-bindingofthehydrolysate.
